Eggless Whole Wheat Carrot and Orange Zest Bundt Cake


¾ cup of whole wheat flour
½ cup of all purpose flour
¼ teaspoon of salt
1 teaspoon of orange zest, fresh
¼ teaspoon of all spice powder
1 teaspoon of baking soda
½ teaspoon cinnamon powder
½ cup of orange juice (add 1 tablespoon extra if required)
¼ cup of olive oil
½ cup of brown sugar
½ cup of apple sauce
½ teaspoon of pure vanilla extract
cups of grated carrot
cup of walnuts, chopped
¼ cup dessicated or dry coconut, grated


1. Pre-heat oven to 180°C, Grease and dust a bundtpan. Coat walnuts with ½ tablespoon of flour, set aside.
2. Sift together flours, salt, all spice, baking soda, cinnamon together. Add sugar and whisk well.
3. In a separate bowl, mix apple sauce, oil, vanilla extract, coconut, orange juice, grated carrots together.
4. Mix the dry mixture in this wet mixture. Now add chopped walnuts, orange zest and candied ginger.
5. Pour the mixture in prepared pan. Bake for 40 minutes or till done.
6. Allow it to cool completely on a wire rack and then de-mould.


Moist, rich and delicious carrot cake with goodness of whole wheat, carrots and dry fruits.
