- 250 g Amla (Indian Gooseberry) Peel a thin layer before steaming
- 250 g Sugar For soaking; will be absorbed by the amla
- 2-3 tbsp Sugar (powdered) For coating after drying; grind regular sugar
Wash 250g amla thoroughly and peel a thin layer from each one.
Steam the amla in a strainer for 8–10 minutes, just until they soften slightly.
Let them cool, then split them open along the natural lines and separate out the seeds.
Transfer the pulp (the cleaned amla segments) to a bowl and add 250g sugar. Mix well so all pieces are coated.
Cover and keep the bowl aside for 2–3 days. The sugar will dissolve, and the amla will absorb it nicely.
After 2–3 days, strain out the remaining syrup (use it in drinks or desserts). Spread the sugar-soaked amla pieces under the sun and dry for 1–3 days, depending on how chewy you want them.
Grind a little sugar into powder and roll the dried amla pieces in it. If they become slightly moist, let them sun-dry again for a few hours.
Store in an airtight jar - they stay fresh for up to 6 months.
