Yes, it’s been 3 years since LiG came into existence. Time has flown by in the last 2 years. A lot of things have changed, grown bigger and better, and some have been discarded with time. And here we are, 3 years and going strong.

I started LiG as a surprise 5th anniversary gift for V. So with blogversary we celebrate our anniversary too.

I wanted to do an Eggless BlackForest Cake, but couldn’t even find canned cherries in the nearby area, so changed plans last-minute to accommodate and created a Coffee Layered cake. And I must say I did not overly miss the black forest. :)

I used the chocolate base which has been a hit in my family from Eggless Chocolate Truffle Cake. Soaked it in simple coffee syrup & frosted with whipped cream mixed with some coffee. Topped it with some chocolate curls.

In other news, life is going on chug-chug.

It was perfectly perfect for the occasion, though a little heavy on coffee for kids. Thankfully my kids ate only a few spoonfuls and didn’t give me wide awake at night. ;)

Coffee Mocha Cake

Eggless Chocolate Coffee Mocha Layered Cake for a special occasion. It is very easy to whip up using everyday ingredients and no special instruction. The base cake is perfect to be paired any topping or filling of your choice.

Ingredients

for the coffee syrup

  • ½ cup water
  • 1 tbsp instant coffee
  • 2 tbsp sugar powdered

for the frosting

  • 2 cup whipping cream
  • 2 tbsp instant coffee

Instructions

for the coffee syrup

  • Mix all the ingredients together and boil for few minutes. Allow to cool.

for the whipped cream

  • Whip the cream along with coffee for 5-10 minutes till it forms stiff peaks.

how to assemble

  • Place the first layer of cake on a platter, lightly brush it with coffee syrup. Spread 1/4 cup cream on top of it. Place the second layer and repeat with syrup and cream. Now place the third layer and brush with syrup.
  • Do a crumb coat. Keep it in freezer for 15 minutes and allow the coat to firm up.
  • Spread the remaining frosting and decorate with chocolate shavings.

Notes

  1. You can use any cake of your choice and opt for only 2 layers of cake.
  2. You can pair this cake with filling & frosting of your choice.
  3. If using dairy cream for whipping, add powdered sugar to add sweetness.
  4. For ease of assembly, it is best to allow the frosting coats to set partially in freezer for 15-20 minutes.

        Hi by layer of cake. You mean the ready made slices. Also u mentioned crumb. How can one do that. Sorry am new to making cakes.

        1. Hi Munira, By layers I mean, Bake a cake and slice into two or three horizontal layers or you can bake in 2-3 separate same size pans if your oven can accommodate more pans in same batch. Crumb coat is the term used for applying very fine layer of icing on complete cake. This helps in keeping the crumbs of the cake from sticking to icing when you are frosting with the final layer of icing. You can Google and get plenty of tutorials on how to crumb coat your cake. Hope this helps. If you need more help, please don’t hesitate to ask.
