Buttercream Cookie Sandwiches

Buttercream Cookie Sandwiches are delicious snacks for kids. Use any cookie and sandwich buttercream between them to make a great snack.

Lately, I have been creating dishes with leftovers – after ganache, condensed milk, milk, etc I have now found the perfect way to use up leftover Buttercream.

Since we are not very fond of buttercream, I knew I would not be used to frost cakes anytime soon.

So I decided to see what I could do with leftovers. Google as usual came to the rescue. Most articles recommended using it on Graham Crackers.

I follow I Am Baker quite religiously, and last month Amanda posted recipes of sandwich cookies back to back and I instantly knew how I was going to use my leftover buttercream!

I used my old Eggless Cookie recipe with chocolate flavor since I was going to use up Coffee Buttercream and Cherry Compote Buttercream.

Remove the leftover buttercream from the freezer and allow it to thaw overnight in the refrigerator. On the day of making cookies, remove it from the refrigerator and allow it to come to room temperature till it is soft. If need be, whisk it gently to give some shape to it.

The cookies take hardly 20-25 mins to put together and within an hour you will have a scrumptious cookie sandwich for the snacking.

If you are further short on time, then use Digestive Biscuits or any readily available biscuits/ cookies of your choice and make sandwiches out of them for a quick snack.

Buttercream Cookie Sandwiches

Quick and easy snack to put together if you have some leftover buttercream. It is also a great way to use up that extra cup of #leftover buttercream

Instructions

  • Remove the leftover buttercream from freezer and allow to thaw overnight in refrigerator. On the day of making cookies, remove it from refrigerator and allow it to come to room temperature till it is soft. If need be, whisk it gently to give some shape to it.
  • Spread buttercream on a cooled cookie, place a second cookie on top of it. Press gently.
  • Voila! The Buttercream Cookie Sandwich is ready

Notes

  1. If you are further short on time, then use Digestive Biscuits or any readily available biscuits/ cookies of your choice and make sandwiches out of them for a quick snack.
  2. Both Buttercream should be at room temperature before applying on cookies.
  3. Cookies should be completely cooled if using a fresh batch.
