This post is dedicated to my ward, S, who is under my guardianship for the duration of his term at NDA as a cadet. He is my nephew (in-law), but more like a younger brother than a nephew.
He & I are tied by a formal relationship of maami-& bhanja (aunt-nephew in law) for the last 5 years. We hardly ever had much of exchange, I guess you can put that lapse to me being a new bahu & he being a gawky teenager. Then 2 yrs ago, he was sent by his parents to appear for state college entrance exams for B.E. and he stayed with me for 4-5 days, that was the beginning of guardianship. And I believe no one in the whole family, knew that 6 months later, this was the city & guardianship where his whole future will change, for better or worse.
He is in NDA and having, uummmmm, lets say a not so easy time. It is difficult for both him & his parents. Apart from the usual rigmarole of NDA, he suffered severe injury 6 weeks ago, which has made his not-so-easy term, even more difficult. He came back to join NDA couple of weeks ago after a recuperating period at home. Being an observer to his life & future many a times make me wonder about my son’s future & most importantly, my reaction to his choices. I better leave that to future only.
I made this brownie to wish him good luck, give him hope & in spirit a ‘quick fix’ to all his problems. He is committed to being a ‘FLYBOY’ and I wish him all the luck in the world.
For my first attempt I mixed the batter in a pan & baked it directly in individual serving bowl, however my bowl was on the shallow side and the batter bubbled up on baking and the sides of the bowl were smudged. I can guarantee that only the appearance was affected. So if you have deep enough serving bowl, go right ahead and bake in it.
For the second lot, I baked in a separate microwave safe dish & transferred the contents quickly to the serving bowl. Remember this brownie will not have a definite form like in oven baking. The brownie will be like a loose mass which you can shape at per your heart’s desire when transferring to serving bowl.
This was a perfect dessert for the tensed family and perfect good luck mascot for my ward. Who can wish him ill after being treated to chocolatey-ice-creamy sin!!
V felt this was a very rich dessert. So people on weight watch like me, could replace flour with whole wheat flour, butter with oil or margarine. Also, this was little too sweet for us, safely one can reduce the sugar to 3 Tbsp. Happy gorging!
How to Make Microwave Brownie at Home?
3-minute Microwave Brownie
Ingredients
- 2 tbsp unsalted butter melted
- 2 tbsp milk
- ¼ tsp vanilla extract
- 4 tbsp sugar
- 2 tbsp cocoa powder
- 2 tbsp all purpose flour
- 1 tbsp semi-sweet chocolate chips
- a pinch salt
- vanilla ice-cream for serving
Instructions
- In a microwave safe bowl, mix together, butter, milk & vanilla extract.
- Add flour, cocoa powder, sugar, choco-chips & salt. Mix till combined.
- Microwave on HIGH for 1 minute 30 seconds. Give a standing time of 3 mins.
- Top with chopped mango and/ or ice-cream and serve.
