Ingredients

for the vegetable layer

  • 50 gram cauliflower broken into small florets
  • 50 gram carrot chopped ¾" long diagonally
  • 50 gram french beans chopped ¾" long diagonally
  • 50 gram peas shelled
  • ½ bell pepper capsicum, halved and sliced ¾" long
  • 1 big potato halved and sliced into ¾" long ribbons
  • 1 onion halved and sliced ¾" long
  • 1 tomato halved and sliced ¾" long
  • 2 green chilles chopped ¾" long diagonally
  • 3 bayleaves tejpat
  • 3 cloves laung
  • ½ inch cinnamon stick dalchini
  • 1 big cardamom badi elaichi
  • ¼ tsp cardamom powder
  • ¼ cup vegetable oil
  • 1 tsp biryani spice mix
  • to taste salt

for the rice layer

  • cup basmati rice long grain
  • cup water
  • 2 cloves laung
  • 2 bayleaves tejpat
  • 1 tbsp milk
  • ½ tbsp vegetable oil
  • to taste salt
  • few drops of color optional

Instructions

for the vegetable layer

  • In a wok, heat the oil and let all the whole spices except cardamom powder temper till they release the wonderful aroma.
  • Then add onions and fry them till golden brown. Add the remaining vegetables along with cardamom powder. Allow them to cook till tender.
  • Add the Biryani Spice mix. Divide the cooked vegetables in 2 portions. Set aside.

for the rice layer

  • In a big pan, boil water with salt, bayleaves, cloves, milk and oil (the ingredients under rice layer). You can cover the pan while the water boils.
  • Add rice, allow it to cook uncovered on medium-high flame till hald cooked like al dente stage. Strain the rice, reserving the liquid. I usually use this liquid to make curries or even knead dough. Divide the strained rice in 2 portions.
  • Grease a heavy bottom big pan or vessel liberally. Spread one layer of rice in the vessel. Sprinkle 1-2 drops of color on top. Now spread one layer of vegetables on top of it. Repeat with the second layer of rice, color and vegetables. You can divide in more layers if you like. Seal the vessel with aluminium foil.
  • Place the vessel on low flame and allow the biryani to cook for 5-10 minutes. Place a griddle pan (tawa) on low flame and move the biryani vessel onto the griddle. Now allow it cook on this indirect heat for another 20-30 minutes or longer if desired.
  • Serve hot with boondi raita, mix veg raita or bathua raita.

for the cake

  • 3 cup all purpose flour
  • cup sugar granulated
  • ½ cup cocoa powder unsweetened
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 cup hot water
  • ¾ cup olive oil
  • 2 tbsp white vinegar
  • 1 tbsp instant coffee granules
  • 1 tbsp vanilla extract

for chocolate whipped cream

  • 90 gram semi sweet chocolate finely chopped
  • 400 ml heavy cream
  • 2-3 tbsp sugar adjust as per taste

for chocolate glaze

  • ¾ cup heavy cream
  • tsp instant coffee granules dissolved in 2 tbsp of boiling water
  • 2 tbsp castor sugar
  • 240 gram dark chocolate finely chopped

for chocolate shards and curved sticks

  • 100 gram dark chocolate
  • 2 tbsp white chocolate chips or coarsely grated

for the sugar syrup

  • ¼ cup sugar
  • ¾ cup water

Instructions

for the cake

  • Pre-heat oven to 180 °C. Line the bottom of one 9 inch springform pan.
  • Whisk together flour, sugar, cocoa, baking soda & salt in a large mixing bowl. Do not use mixer.
  • Combine water, oil, vinegar, instant coffee & vanilla in a separate bowl.
  • Add to the dry ingredients & whisk till just combined. A few lumps are fine.
  • Pour batter into the prepared pan & bake for 50-60 mins till tooth pick inserted in center comes out clean.
  • Cool the cake in the pan on the rack for 15 minutes, then invert it on the rack. Leave it upside down to cool, it helps in flattening any dome shape.
  • Once completely cool, keep it in refrigerator for 15-20 mins to allow the cake to firm up, it will ease the slicing of cake.

for chocolate whipped cream

  • In a large heatproof bowl, place the chocolate.
  • In a heavy bottomed saucepan, stir the cream & sugar & bring to a boil. Remove the pan from heat & pour over the chocolate. With a whisk, beat the chocolate & cream together vigorously. You should achieve a smooth mixture. Allow it to cool at room temperature.
  • Once cold, cover the cream so avoid strong odors & refrigerate for 24 hrs (atleast for 4 hrs minimum).
  • With a whisk or electric hand mixer, beat the cream till it is almost thick. This will happen very quickly. The cream should be just firm enough to spread but not so firm that it looses it lightness & creaminess. Whipped cream can be stored upto 3 hours.

for chocolate glaze

  • Bring the cream, instant coffee granules & sugar just to a simmer in a small saucepan over medium heat.
  • Remove from the heat & add chocolate. Allow it to stand till chocolate softens (about 3 mins).
  • Gently stir using a spatula till chocolate melts & the glaze is smooth. Do not whisk.
  • Strain the chocolate glaze into a measuring cup.
  • Let stand until slightly warm (tepid) but still liquid & pourable (about 15 mins).

for chocolate sharts and curved sticks

  • Melt the chocolate using double boiler method.
  • Spread half of the melted chocolate on a butter paper in a thin layer using a palette knife.
  • Quickly sprinkle white chocolate chips on the melted chocolate strip.
  • Allow it to set in fridge for 15-20 mins. Remove from fridge & remove butter paper.
  • Break into uneven shapes. Spread in a plastic/ melamine plate & again allow it to firm up in chill tray.
  • For making sticks, pour remaining melted chocolate in a paper cone. Cut out slightly big tip. Squeeze out zig-zag lines in criss cross manner on the butter paper. Set them like sharts.
  • Chocolate Sharts & sticks can be made 1 week in advance.

for the sugar syrup

  • Boil water & sugar together. Once it boils, lower the flame & allow it to heat for another 1 minute. Remove from heat & cool completely. It can be made in advance & stored in refrigerator.

assembling the cake

  • Transfer the cake on to a platter. Then using a long serrated knife, slice it into 3 layers.
  • Make some holes into the bottom layer using a form. Soak the bottom layer in sugar syrup. Then lightly spread whipped chocolate cream over it. Place the second layer on top of the bottom layer & repeat the process of soaking & spreading cream. Finally place the top layer & again soak it. Lightly spread the cream on top & sides of the cake. Refrigerate the cake for 1 hr.
  • Transfer the cake to a wire rack. Place a cookie sheet under it to catch any excess dripping chocolate.
  • Pour the glaze in the center of the cake & tilt the rack to cover the sides of the cake as well.
  • Allow the excess to run down the sides of the cake.
  • Decorate with chocolate sharts & sticks.
  • Refrigerate the cake until glaze sets (about 1 hr). I refrigerated for 24 hrs prior to cutting covered in a cake dome as I wanted the flavors to really set in. Serve chilled.

  • 200 gram cottage cheese homemade paneer
  • ¾ cup water
  • 5 gram china grass
  • 1 mango peeled, chopped & pureed
  • 1 tsp vanilla extract

for sauce - mango sauce

Instructions

for the crust

  • Place biscuits in a zip lock & crush using a rolling pin into powder.
  • In a large mixing bowl, place butter & crushed biscuits. Using your hands rub in butter & biscuits together until well mixed.
  • Place the mixture in a 6 inch loose bottom pan or springform pan. Press tightly to form a crust. Set in freezer for ½ hour.

for the filling

  • Meanwhile, soak china grass in ¾ cup water for 10 mins until it becomes soft.
  • In a processor run hung curd & paneer until smooth & creamy. Transfer it to a mixing bowl.
  • In a heavy bottom sauce pan, heat mango puree over medium flame. Do not allow this to boil.
  • In a separate sauce pan, place china grass & water mixture until it melts completely, about 5-6 mins. Do not allow this to boil.
  • Once china grass melts completely, pour hot china grass solution into hot mango puree, stirring all the while.
  • Slowly add the mango-china grass mixture to curd-paneer mixture.
  • Stir in the sugar & vanilla extract and beat with a wire whisk until well blended.
  • Pour this mixture over the prepared crust & allow to set in refrigerator for 3-4 hours.

  • The sauce should be at room temperature. This was important for me as I was using preserved sauce from earlier recipe.
  • Spread the sauce over the set cheesecake.
  • Chill overnight in refrigerator for good setting or you can set in freezer for 2-3 hours.
  • When set, slice & serve chilled.

  • kg carrot washed, peeled & grated
  • 1 litre milk
  • 150 gram khoa mawa
  • ½ cup sugar granulated
  • ¼ cup cashew nut, raisin, pistachio, cardamom seed kaju, kismis, pista, elaichi for garnishing

Instructions

  • Boil milk in a large vessel. Add grated carrots. Allow the carrots to cook on slow flame. You may need to continuously stir the mixture for a while and in between to avoid sticking. When the milk is reduced completely, add mawa.
  • Continue stirring the mixture further till mawa is nicely mixed and roasted. Add any dry-fruits if you are using along with cardamom powder. Add sugar and continue to cook till the sugar is totally absorbed. Serve hot.

Notes

  1. You may boil grated carrots before adding to milk to hasten up the process but I wouldn’t recommend it.
  2. You can also adjust sugar as per your taste.
  3. You can also replace sugar with bura or khand for a rich texture and taste. Try replacing it with the same amount of sugar with khand and adjust if required.
  4. You can also play with quantity of milk and mawa based on your preference, my family prefers less milk and mawa.
  5. If you do not wish to use khoya, then use 2.5 litres of milk for 1 kilo of carrots.

  • Pour 40 ml water in a clean jar or shaker with tight fitting lid. Add coffee granules and sugar. Close the lid tightly and shake with all your might for 1½ to 2 minutes. In the beginning you may hear the sugar granules, keep shaking until you can hear no more. And the jar feels like it's almost full. This is the most important stage and you must follow this closely as described. The jar should be filled with froth till the top.
  • Half fill a tall glass with ice cubes. Pour the froth into the glass. You can swirl some water in the shaker/ jar to remove any leftover froth and add to the glass. top up the water to the rim or leave space of adding milk if you want. Pop a straw a enjoy your Iced Frappé.

Notes

  1. It is easiest and a great recipe for a frappé. I loved it.
  2. You can even make this frappé ahead, pour and enjoy when the mood strikes. A great choice if you are coffee lover.
  3. Instead of roasted or fresh ground coffee, this frappé specifically uses instant coffee powder which is a big plus as it is more readily available to me.
