I came across this recipe in the blogosphere. The bread looked soft and very, very tempting. I couldn’t resist trying a new recipe.

The banana walnut bread is soft, moist, fragrant just as banana bread should be. V is not a lover of banana in baking but for this bread even he couldn’t stop himself from loving it.

Definite a must-try recipe.

Ingredients

  • cup all purpose flour
  • tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ¾ cup sugar granulated
  • cup olive oil
  • ½ cup milk
  • 2 overripe bananas
  • 1 tsp vanilla extract
  • ¼ cup chocolate chips
  • ¼ cup walnuts chopped

Instructions

  • Preheat oven to 180 °C. Grease and dust a loaf pan. Coat chopped walnuts and choco chips in 1 teaspoon of flour to avoid sinking to the bottom while baking.
  • In a large bowl, sift together flour, baking powder, and baking soda twice. Add salt and whisk well till all ingredients are combined. In another bowl, mash banana using a fork. Add remaining wet ingredients (sugar, oil, milk and extract) to the mashed bananas. Whisk till you get uniform mixture.
  • Add this wet mixture to the dry ingredients and gently fold in. The mixture should be just combined with no air pockets visible. Do not over mix the batter. Add in dusted walnuts and choco-chips. Gently fold.
  • Pour the batter in the prepared pan and bake for 55-60 minutes or till the toothpick inserted comes out clean. Cool the bread on a rack for 30 minutes and then remove from the pan and then allow to cool completely. Serve warm with jam or butter or as a mid-day snack to kids.

Notes

You can add choco chips, like I did and even other dried fruits in combination of your choice.
