  • When buying green chillies, select chilies which have started turning just a wee bit red around the mouth or any other part.
  • Place them in a dark corner of the kitchen.
  • After a few days, you will notice that the whole chilli has turned red and has wrinkled. It means that you are on right track.
  • Just be patient and allow some more days of sunlight till it totally looses water content and become dry. Once it reaches this stage, remove and store in an airtight container in a clean and dry place.

Notes

You can dry the chilies in shade or kitchen also if there is no sunlight. It may take a little longer.
